ingredients
- 1 small ripe banana
- 1/2 cup almond milk
- 1 tablespoon olive oil or coconut oil
- 1/2 cup buckwheat flour
- 1/2 teaspoon baking powder
Method
Step 1
In a mixing bowl, mash the banana with a fork. Add almond milk and oil and whisk with the same fork to combine. Add buckwheat flour and baking powder, mix until well combined.
Step 2
Heat a non-stick skillet until very hot and grease it lightly with oil. Cook 6 pancakes, over medium heat, until golden brown on both sides.
