"Coming at you with some lunch inspo this Friday. Remember when I was chatting on my stories about how I’ll food prep and cook in bulk so there’s always food in the fridge during a busy week? Most weeks I’ll chuck a couple of kilos of chicken thighs in the oven that have been rubbed with olive oil, garlic powder and za’atar, that way they’re easy to pack in a lunchbox with some pourkouri (bulgar), salad or veggies or eat in a wrap like I did today. I smothered a good heaped teaspoon of hummus, piled a cucumber, tomato and parsley salad with sumac then layered with chicken pieces. Bish bash bosh 👌🏽"
