Summer is just round the corner, can you feel it, can you feel?! Order some of that nisiaste (maize starch) and triandafilo (rose) cordial and get ready for those summer dayz ☀️
Mum was sending me photos of this from her garden a few weeks ago. Growing up, this would be in the fridge all summer; I have these vivid memories of seeing little bowls in the fridge and trying to reach for one on my tippy toes. Recipe below and on nikolettaskitchen.com
On another note, have you ever tried triandafilo cordial with ouzo? 😉👌🏽
INGREDIENTS
4 tablespoons nisiaste or cornflour
800ml water
Serve with:
triandafilo (rose) cordial
ice-cold water
caster sugar
rose blossom water
ice cubes
METHOD
1. In a pot, dissolve the nisiaste or cornflour with the water.
2. Place over a medium-low heat stirring constantly with a whisk until it starts to bubble. Cook for around 5-6 minutes until thickened.
3. Rinse a large Pyrex or small bowls with water so the mahalepi doesn’t stick to it and pour in your mixture.
4. Leave to cool before popping it in the fridge to set for at least 2 hours.
5. Cover with a thin layer of water so it doesn’t dry out.
6. Serve in chunks with triandafilo cordial, ice-cold water, a sprinkle of caster sugar, a drop of rose blossom water and a couple of ice cubes."
