ingredients
- 4 tablespoons aquafaba
- 100 millileters coconut milk
- 100 grams vegan white chocolate
- 1/4 teaspoon agar agar
- The seeds from 1/3 of a vanilla bean
Method
Step 1
Place coconut milk, vanilla seeds and agar agar in a small pot over low heat.
Step 2
Bring everything to a boil and let it simmer for 3-4 minutes. Turn off the heat, add in the chocolate and whisk until the chocolate is melted and everything is combined. Let it cool for a few minutes.
Step 3
Whip the aquafaba for 5 minutes, until soft peaks form (I used a hand mixer). Transfer it over the cooled chocolate and fold it in with a spatula (with gentle, circular moves). Transfer the mousse into 2 cups and place them in the fridge to set for an hour or so. Serve the mousse with fresh fruits
