Beef Fillet

"When we are having a treat, or it’s a special occasion, then beef fillet is my go-to. We have it so rarely that it’s appreciated a whole lot more. It’s expensive, so most people are afraid to spend so much and then overcook it. Just follow the below method and you really won’t go wrong. Both ways are utterly delicious."

ingredients

  • 1 kilogram beef fillet, trimmed and tied with kitchen string
  • 1 tbsp sunflower oil
  • 6 tbsp fish sauce

To cook the fillet

Method

  • Step 1

    Rub fish sauce over the fillet in the same way and marinate the beef; the longer the better. It’s such a simple trick but tastes incredible.

    Preheat the oven to 200°c.

  • Step 2

    Add the sunflower oil to a large frying pan over a high heat, and then carefully place the marinated fillet into it using tongs. Turn the fillet after it has had 2 minutes left untouched on each side, until browned and sealed well all over, including the ends. Transfer the fillet to a roasting tin and cook in the preheated oven for 10 minutes for rare, 15 minutes for medium-rare or 20 minutes for medium.

    Cover the beef with foil to keep it warm and leave to rest properly for 10 minutes before slicing, as thick or thinly as you like. You can head down various routes with a beautifully cooked fillet: a roast with all the trimmings, steak and chips, a noodle dish such as ramen, or serve with a simple salad or vegetables.
