ingredients

  • 2 cups grated sweet potato
  • 7 ounces halloumi cheese, grated
  • 3 scallions, sliced
  • 3 medium eggs
  • 3/4 cups gluten free all purpose flour
  • 1 teaspoon smoked paprika
  • Black pepper, To Taste
  • 3 tablespoons plus 1 teaspoon milk

Method

  • Step 1

    Combine sweet potato, halloumi, and scallions in a bowl. Stir in eggs, then flour, paprika and black pepper. Once incorporated, mix in the milk.

  • Step 2

    Heat a skillet on medium-low. Shape sweet potato mixture patties with your hands and cook for 10 minutes. Then flip and cook for another 5 minutes on the other side.

  • Step 3

    Then slide the fritters out of the pan, stack em up and serve with your choice of toppings.
