Totally obsessed with my dinners this week 👏🏼💥 On Sunday I made a big ‘ol batch of Ropa Vieja and Cuban Black Beans! So good and so very simple. I made @bonappetitmag recipes for Ropa Vieja and Cuban Black Beans but modified both to be made in my pressure cooker (separately, not together). It’s Thursday night and I’m still not bored of eating this goodness 🙌🏼 #myengineerednutrition #cubanfood #ropavieja #blackbeans
💥Hoisin Pork with Green Beans, Eggplant and Cauli-Rice! 💥 This turned out to be an unexpectedly awesome Tuesday night dinner 🙌🏼 I was talking to my bestie today about what she was making for dinner (typical daily convos, obvi) and she mentioned that she was doing Hello Fresh meal delivery and tonight she was having hoisin shrimp with rice and green beans. That sounded bomb but I (a) didn’t have shrimp on hand and (b) I’m doing low carb right now, so no rice. BUT I’m always up for a challenge so I used what I had in my fridge! 👇🏼 1️⃣ I roasted my green beans and eggplant at 400F on baking sheets with a little drizzle of olive oil and got that going first 2️⃣ Next I made the pork, combining fresh ginger, garlic and 2-ish tbsp hoisin sauce and tossing my cubed pork tenderloin all in that goodness. I sautéed that up in a pan stovetop. 3️⃣ Then I was thinking about how great cauli-rice would be with this and it dawned on me that Past Meg totally had some frozen single serving portions in the freezer - THANK YOU PAST SELF 🙏🏻 So I sautéed that up with some green onions! 4️⃣ Plated all that yumness up together and garnished with scallions and sesame seeds and TAH-DAH! NEW recipe testing in 2018! The end of 2017 was a doozy and I fell behind on creating new and delicious recipes for you all ????????‍♀️ #reallifejobcalled BUT I’m starting the new year off strong and I’m back in the kitchen. Stay tuned this week as I will bring you THIS NEW RECIPE ???? No-Bake Chai Oatmeal Energy Balls! I don’t know about you, but I’m in a total reset mode with my diet and I’m looking for healthy and quick snacks on the go that aren’t packed with a bunch of sugars and garbage. These are the perfect grab-n-go snack! I made these with @myoatmeal @truenutrition chai flavored gluten free quick rolled oats, vanilla pea protein and medjool dates - that’s it! (Well along with some vanilla and cinnamon). Each ball packs 4g of protein and just 13g of carbs and 2.5g of fat! ???????? Are breakfast/brunch salads a thing? Are they a thing now? Answer: Yes! 🥗🍳 I got out all the ingredients for an omelette or a scramble this morning but as I started cooking I realized I wasn’t really in the mood for either. What I was really craving was a salad. I’d already sautéed the sausage, onion, peppers and mushrooms but stopped there instead of adding the spinach and eggs. I filled a bowl with the raw spinach, quickly poached some eggs and voila! Tomorrow is Super Bowl Sunday...what are you eating?! 🏈🍻 I’m seriously craving chili (even though it’s sunny and 70 here is SF 🙌🏼) and I’ll be making my Buffalo Chili! You can grab the recipe on the blog, search under BEEF recipes. I love the rich smoky flavor of this chili, due to the chipotle chilies in adobo and there is just a hint of cocoa in here. I don’t have beans listed in this recipe on the site, but I’m totally adding a can of red kidney beans to make this even better.
