Mexican Tomato Rice
I know it’s just a humble pot of rice but it’s funny that rice has played a pretty significant role in my life. I met my hubby in a cooking class because I burned the rice ( a long story for another post) & now this Mexican rice was a gift to ourselves that my girl and I made when we traveled to Hawaii this past summer. It was a trip about facing fears when it comes to traveling with food allergies. Since last August, we’ve made this rice a lot- it’s an easy, flavorful weeknight meal & one that you can customize. It’s also free from the top 8 allergens so it’s a crowd pleaser for all. -@myberkeleykitchen
