Avocado and Tomato Salsa Poached Egg Toast
(2 persons)
Ingredients:
2 pomodori tomatoes
2 eggs
2 tablespoon of olive oil
2 table spoon of finely chopped parsley
1 avocado
1 teaspoon of lemon juice
Salt and pepper
Directions:
Bring a pan of water to boil. Make a little whirlpool in you pan and add the egg. Poach the egg fora bout 5 minutes.
Cut the tomatoes in julienne and in small dices. Mix the tomatoe with, lemon juice, parsley, salt and pepper.
Cut the avocado in half and then in thin slices.
Place the tomato on the bun first, then the avocado. Put the poached egg on the avocado. Add a bit of parsley on top and done!
