Salmon Salad With Chickpeas And Cucumber

Ingredients
1 hot smoked salmon fillet
2 large handfuls mixed green salad
10cm chunk of cucumber, sliced
Half a tin of chickpeas, drained and rinsed
Small handful of walnuts
1 tbsp olive oil
Generous squeeze of lemon
Salt/pepper to taste
Method
Mix together the salad, chickpeas and cucumber.
Drizzle over the olive oil and lemon juice. Season.
Use a knife and fork to roughly flake the salmon and serve on top of the salad, along with lightly crushed walnuts.
