For the Apples

  • 4 medium red apples, peeled and sliced
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1 1/2 teaspoons cinnamon
  • 1/4 cup bourbon
  • 1/2 cup (1 stick) salted butter

For the Cake Batter

ingredients

  • 1/2 cup (1 stick) salted butter
  • 1 cup packed dark brown sugar
  • 1/4 cup honey
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Pinch of sea salt
  • 2 teaspoons cinnamon
  • 1/3 cup whole milk

To prepare the apples:

Method

  • Step 1

    Wash, peel, and slice the apples into a large bowl. Add the honey, lemon juice, and cinnamon. Toss until the apples are well coated, then set aside to macerate.

  • Step 2

    In a 12-inch Yeti Cast Iron Skillet over medium heat, melt the butter, stirring continuously, until it turns a rich golden brown, about 5 minutes. Be careful not to let it burn.

  • Step 3

    Add the macerated apples to the skillet and sauté for 5 minutes, stirring occasionally. Deglaze the pan with the bourbon and cook for another 5 minutes, until the apples are caramelized.

  • Step 4

    Remove the skillet from the heat an set aside while making the cake batter.

To make the cake batter:

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In a medium bowl, cream together the butter, dark brown sugar, honey, and vanilla extract until light and fluffy.

  • Step 3

    Add the eggs one at a time, scraping down the bowl between each addition. Beat until smooth.

  • Step 4

    In a separate bowl, whisk together the flour, baking soda, baking powder, sea salt, and cinnamon.

    Gradually add the dry ingredients to the wet mixture, alternating with the whole milk. Stir until you achieve a smooth batter. If needed, add a little more milk to thin it out.

    Pour the batter over the sautéed apples in the skillet, spreading it evenly. Place the skillet in the preheated oven and bake for 45 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.

  • Step 7

    Remove the skillet from the oven and allow the cake to cool for 10-15 minutes. Once cooled, flip the cake out onto a serving plate.

    Serve with cinnamon whipped cream or ice cream if desired.
