I feel that it is a long lost recipe I rediscovered when my mom told me to mix everything together rather than to layer. Wow, what a time saver! Recipe Intro From mendozainspirations

A brilliant hassle-free way to get all the delicious flavors of kofta into one easy pan.
2 cups whole wheat bulgur (called black bulgur in middle eastern markets)
1 tablespoon olive oil
1 large onion, diced
1/3 cup pine nuts
2 pounds ground beef
1 bunch of parsley, chopped
2 teaspoon of salt
1 teaspoon of allspice
1 teaspoon of cracked black pepper


1. Soak the bulgur in 4 cups of warm water for 30 minutes.

2. Sauté the onion in olive oil until translucent then add the pine nuts and stir. Remove from heat when the pine nuts are lightly browned.

3. Drain the bulgur in a fine mesh strainer or (as my mother does) squeeze the water out with your hands.

4. Combine the drained bulgur with all of the ingredients and mix well.

5. Grease a 9x13 pan before patting down the mixture evenly.

6. Score the top of the Kibbi diagonally in diamond shapes.

7. Place in a preheated 400 degree oven for 35-45 minutes or until top is browned and meat is cooked through.

8. Cool slightly before cutting the diamonds out and serving them with hummus, laban or a salad.
