For the Cornflake Brittle
- 3 cups cornflakes
- 1/2 cup (1 stick) salted butter, diced
- 1/2 cup firmly packed light brown sugar
- 1 teaspoon flaky sea salt (optional)

- 2 cups (12 ounces) good-quality milk chocolate, melted
- Additional flaky salt, for garnish
Method
Step 1
Preheat the oven to 350°F and grease a small baking tray. Line it with parchment paper to ensure the brittle doesn't stick.

Place 3 cups of cornflakes in a large, heatproof bowl. Level the cups, ensuring they're not heaped, and set aside.

In a medium saucepan, add the butter, brown sugar, and flaky sea salt. Cook over medium heat for 1-2 minutes, stirring constantly, until the butter melts. Once melted, bring the mixture to a simmer and continue cooking on medium-low heat for an additional 1-2 minutes, until the sugar has dissolved and the mixture looks glossy.

Remove the toffee mixture from heat and immediately pour it over the cornflakes. Toss the cornflakes in the mixture until they are well coated.

Spread the coated cornflakes evenly onto the prepared baking tray in a layer about ½ inch thick. Bake on the middle rack of the oven for 10-15 minutes, or until the brittle turns a deep golden brown. Keep an eye on it, as the toffee can burn easily.

Remove from the oven and allow the brittle to cool completely before breaking it into pieces. For the best texture, store the brittle in an airtight container in the refrigerator.
