ingredients

For the Cornflake Brittle

  • 3 cups cornflakes
  • 1/2 cup (1 stick) salted butter, diced
  • 1/2 cup firmly packed light brown sugar
  • 1 teaspoon flaky sea salt (optional)

ingredients

Optional Chocolate Coating

  • 2 cups (12 ounces) good-quality milk chocolate, melted
  • Additional flaky salt, for garnish

Method

  • Step 1

Preheat the oven to 350°F and grease a small baking tray. Line it with parchment paper to ensure the brittle doesn't stick.

  • Step 2

Place 3 cups of cornflakes in a large, heatproof bowl. Level the cups, ensuring they're not heaped, and set aside.

  • Step 3

In a medium saucepan, add the butter, brown sugar, and flaky sea salt. Cook over medium heat for 1-2 minutes, stirring constantly, until the butter melts. Once melted, bring the mixture to a simmer and continue cooking on medium-low heat for an additional 1-2 minutes, until the sugar has dissolved and the mixture looks glossy.

  • Step 4

Remove the toffee mixture from heat and immediately pour it over the cornflakes. Toss the cornflakes in the mixture until they are well coated.

  • Step 5

Spread the coated cornflakes evenly onto the prepared baking tray in a layer about ½ inch thick. Bake on the middle rack of the oven for 10-15 minutes, or until the brittle turns a deep golden brown. Keep an eye on it, as the toffee can burn easily.

  • Step 6

Remove from the oven and allow the brittle to cool completely before breaking it into pieces. For the best texture, store the brittle in an airtight container in the refrigerator.

  • Step 7

Once the brittle is broken into pieces, dip them in melted chocolate, and place on a lined baking tray. Sprinkle with additional flaky salt. Let the chocolate set in the fridge before serving.
