ingredients

  • 1 pound ground turkey breast
  • 1/2 cup whole wheat breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tablespoon dried parsley
  • salt, to taste
  • black pepper, to taste
  • 1 (28 ounce) Tuttorosso Tomato Sauce
  • Italian seasoning, to taste
  • 2 tablespoons avocado oil
  • 1/2 yellow onion, sliced
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 10 dinner rolls
  • garlic powder, to taste
  • 1 8-ounce package provolone cheese, sliced `
  • 1 8-ounce package mozarella cheese, sliced `

Method

  • Step 1

    Combine ground turkey, breadcrumbs, egg, garlic, dried parsley, salt, and black pepper in a large mixing bowl. Roll mixture into (10) 1½ to 2 inch sized balls.

  • Step 2

    Align the raw meatballs in the bottom of a Crockpot.

  • Step 3

    Pour Tuttorosso Tomato Sauce over the meatballs. Season with Italian seasoning, salt, and pepper to taste.

  • Step 4

    Set Crockpot on high and cook for 4 hours.

  • Step 5

    In the last 10 minutes of cooking time, preheat the oven to 400°F.

  • Step 6

    Add 1 tablespoon of avocado oil to a pan followed by sliced peppers and onions, seasoning with salt and pepper to taste. Set stove to medium heat and sauté for 10 minutes until fragrant and softened.

  • Step 7

    Once the meatballs are cooked, prepare the rolls.

  • Step 8

    Slice open rolls and place on a non-greased baking sheet. Use the remaining tablespoon of avocado oil to drizzle on the inside of rolls. Season with garlic powder to taste.

  • Step 9

    Place 1 cooked meatball inside each roll followed by ½ slice of provolone cheese and ½ slice of mozzarella cheese. Place a spoonful of the cooked onions and peppers mixture inside each sub.

  • Step 10

    Bake for 10 minutes until cheese is melted and bread is toasted. Enjoy!
