Summer is still kicking over here, so maybe I'm not posting this Rosemary Sponge Cake with Apricot Compote and White Chocolate Buttercream too late. It has: classic and simple sponge cake layers brushed with rosemary simple syrup and an apricot compote made from fresh apricots, turbinado sugar, rosemary strands, limoncello, and sea salt, making it delightfully sweet and tart with a slight caramel flavor, and covered in white chocolate buttercream, a flour buttercream (aka boiled-milk frosting or ermine frosting), that's been infused with rosemary. and decorated with dehydrated (and edible) lemons + rosemary strands.
