For the Dough

ingredients

  • 2/3 cup milk
  • 1 1/3 teaspoons active dry yeast
  • 3 1/2 tablespoons unsalted butter, softened
  • 2 1/2 tablespoons granulated sugar
  • 1/4 teaspoons salt
  • 1 teaspoon freshly ground cardamom
  • 2 cups all-purpose flour

For the Filling and Baking

ingredients

  • 4 tablespoons unsalted butter, softened
  • 2 1/2 tablespoons granulated sugar
  • 1 tablespoon cinnamon
  • 1/4 teaspoon vanilla powder
  • 1 egg, lightly beaten with 1 teaspoon sugar

Method

  • Step 1

    Make the dough: Heat milk to about 104ºF. Add yeast and leave to stand until completely dissolved.

  • Step 2

    Mix butter, sugar, salt and cardamom in a large bowl. Add milk to butter mixture. Then add flour and work until dough is smooth and elastic. Put dough in a bowl. Cover bowl with a cloth and leave to rise until doubled in size in a warm place, about 1 hour.

  • Step 3

    Make the filling: Mix all the ingredients in a small bowl. Set aside until dough is fully risen.

  • Step 4

    When dough is ready, roll out a rectangle about 11x15 inches. Spread the filling on top. Fold the dough two times, so you have rectangle about 11x5 inches (three layers of dough). Cut the dough into 12 strips about 1 inch wide (cut on the short side). Cut each strip in half lengthwise, but not to the end (leave about 1/3 inch). Twist together into a knot and put on parchment paper. Cover with a cloth and leave to rise for 30 minutes.

  • Step 5

    Preheat the oven to 350ºF. Brush the buns with the egg beaten with sugar. Bake for 8-12 minutes.
