Thai Carrot and Sweet Potato Soup

ingredients

  • 1 chopped onion
  • 2 cloves minced garlic
  • 1 tablespoon minced lemongrass
  • 1 tablespoon minced ginger
  • 1 teaspoon fresh turmeric, minced or turmeric powder
  • 3 cups diced sweet potato
  • 3 cups diced carrots
  • 4 cups stock, or water, hot
  • 1/4 cup coconut milk

Method

  • Step 1

    In a large pot, add the onion, garlic, lemongrass, turmeric and ginger and sauté for 5 to 6 minutes, until the onion is translucent.

  • Step 2

    Add the carrots, sweet potatoes, salt, and stock to the pan. Bring the soup to a low boil. Cover and simmer for 15 to 20 minutes.

  • Step 3

    Blend the soup until completely smooth. Serve with your favorite toppings (I used coconut yogurt, toasted cashews and dill) Enjoy!
