Pumpkin Soup with Ginger and Pumpkin seeds

ingredients
- 2 tablespoons ghee
- 1 chopped onion
- 2 minced garlic cloves
- 1 chopped leek
- 1 inch piece minced ginger
- 3 pounds pumpkin
- 4 cups stock
- 1/4 cup pumpkin seeds
- 1/4 cup coconut yogurt
- 1/4 cup parsley leaves
Method
Step 1
Melt ghee in a heavy-based saucepan. Add chopped onion, ginger, leek, garlic, salt and pepper and cook gently until soft (about 10 minutes).
Step 2
Add pumpkin and stock and simmer until pumpkin is completely soft. Puree with a stick blender or high speed blender.
Step 3
Serve with a drizzle of coconut yogurt, fried pumpkin seeds and a few parsley leaves.
