ingredients

  • 1 package pasta
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 1/2 cup chopped sun-dried tomatoes
  • 1 cup spinach
  • 1/2 unsalted cashews
  • Pinch of salt and pepper
  • 2 tablespoons tomato paste

Method

  • Step 1

    Boil pot of water, and cook pasta according to box. Save 1/2 cup of the pasta water.

  • Step 2

    In large sauce pan, heat olive oil for about 1 minute on medium-low heat. Add minced garlic and cook for about 30 seconds, until fragrant.

  • Step 3

    Add in chopped sun-dried tomatoes, cook for 5 minutes. Add in spinach, and lower heat.

  • Step 4

    In a high speed blender, blend together cashews and 1/2 cup of pasta water with pinch of salt and pepper until creamy.

  • Step 5

    Add cream sauce into pan and tomato paste. Mix all ingredients until combined.

  • Step 6

    Fold in cooked pasta, and give it a good mix. Keep heat on low and let cook for 5-10 minutes.
