These Salsa Verde and Roja Chilaquiles are legit! My mom, mama Cardenas still makes this savory, spicy and crunchy meal for breakfast the only way she knows how, the authentic Mexican way. No store-bought salsa, never melted cheddar or jack cheese, only queso fresco or Cotija cheese, and always prepared with fresh chips. Needless to say, I've continued the family tradition.
