Apple Rose Tart

Ingredients:

For the filling:

4 apples

1/2 cup almond meal

2/3 cup applesauce

Powdered sugar, for dusting 

1 1/4 cup powdered sugar

1/2 cup water

the juice of 2 lemons

For the crust:

1 cup of all purpose flour

2 tbsp cornmeal

1/2 cup cold butter

3/4 cup powdered sugar

1/2 cup almond meal

1 Egg, beaten

Pinch of salt

Method:

Crust:

Preheat the oven to 350 F.

Cream the butter until smooth.

Add the sugar, almond meal, salt, the egg, then flour and cornmeal, slowly incorporating without overworking the dough.

For the dough into a ball and refrigerate for at least 1 hour.

Remove the dough from the refrigerator, roll out and press into a springform pan. 

Filling:

Whisk together the almond meal and applesauce, spread evenly across crust and bake for 10 mins at 350 F.

In a saucepan, bring the water, sugar and lemon juice to a simmer.

 

Using a mandolin, thinly slice the apples and then submerge them into the syrup mixture for 15 minutes until they are pliable.

Remove and let cool before forming each apple slice into a rose. Repeat until there are enough roses to cover the dough.

Bake for 30 mins at 325 F.

Let cool before removing from pan. Serve sprinkled with powdered sugar.
