Monday sets my tone for the whole week so I am taking every opportunity today to avoid time wasters and get the ball rolling. It can be hard for me to transition from Sunday to Monday, but I try to remind myself that the anticipation of the hard task is ALWAYS worse than the task itself. Maybe that will help you too ☺️

- 1 ounce halloumi, cubed
- 1/ 2 avocado, smashed
- Lemon, juiced, add to taste
- Salt and pepper, To Taste
- 1 slice bread, of choice, toasted
- 3 cherry tomatoes, quartered
- Basil
Method
Step 1
Heat a dry skillet over medium. Cook the halloumi cubes 2-3 minutes, then flip and cook for 2 more minutes. Remove pan from heat.
Step 2
Mix the avocado with lemon juice, salt and pepper. Spread on toast. Top with halloumi, tomatoes and fresh basil.
