"Monday sets my tone for the whole week so I am taking every opportunity today to avoid time wasters and get the ball rolling. ingredients

  • 1 ounce halloumi, cubed
  • 1/2 avocado, smashed
  • Lemon, juiced, add to taste
  • Salt and pepper, To Taste
  • 1 slice bread, of choice, toasted
  • 3 cherry tomatoes, quartered
  • Basil

Method

  • Step 1

    Heat a dry skillet over medium. Cook the halloumi cubes 2-3 minutes, then flip and cook for 2 more minutes. Remove pan from heat.

  • Step 2

    Mix the avocado with lemon juice, salt and pepper. Spread on toast. Top with halloumi, tomatoes and fresh basil.
