Black Bean Baked Eggs

Breakfast, Brunch
- 1 can of Amy's refried black beans
- 1/2 cup of fresh baby vine tomatoes
- 2 eggs
- 1 tbsp of fresh basil
- 2 tsp of olive oil
- 2 tsp of balsamic vinegar

Directions:
Preheat the oven to 400 degrees.
In two small cocotte's add a tsp of olive oil, then a layer of fresh sliced vine tomatoes. Pour a tsp of balsamic vinegar over the tomatoes and a sprinkle of salt and pepper. Add a couple of spoonfuls of the refried black beans (leaving only enough room for the egg), then top with one cracked egg.
Place cocotte's in the oven and bake for 15-20 minutes, until the eggs whites are fully cooked. Garnish with fresh basil and serve!
