Hot Calabrese pizza

ingredients

  • Pizza dough
  • Tomato sauce
  • Grated mozzarella
  • Tomatoes
  • sliced Garlic cloves
  • Hot cacciatore sausage
  • Hot peppers
  • Black olives
  • Green olives
  • Salt
  • Pepper
  • Basil

Method

  • Step 1

    Place dough in a covered container or a zip-lock bag and allow to rest at room temperature for at least 2 hours before baking.

  • Step 2

    Place stone or steel tray in oven and preheat to 245ºC [475ºF].

  • Step 3

    Take dough ball and flatten it with your hands on a lightly floured work surface. Starting at the center and working outwards, use your fingertips to press the dough to 1/2-inch thick. Stretch dough into a 10 to 12-inch circle about 1/4-inch thick by draping over knuckles and gently stretching.

  • Step 4

    Lightly sprinkle your pizza board (or a flat baking sheet) with cornmeal and transfer the flattened dough to the board.

  • Step 5

    Spoon on the tomato sauce and sprinkle with cheese.

  • Step 6

    Add tomatoes, garlic, sausage, hot peppers, and olives.

  • Step 7

    Season with salt and pepper.

  • Step 8

    Sprinkle some cornmeal on the baking stone in the oven [careful, the oven is hot]. Give the board a light shake to see if the dough slides, if not, add a bit more cornmeal under the pizza.

  • Step 9

    Slide the pizza off of board and onto the baking stone in the oven. Bake until the crust is browned and the cheese is golden, about 10-15 minutes.

  • Step 10

    Top it with basil leaves.
