ingredients
- 1 8-ounce block tofu
- 1 1/2 tablespoons olive oil, divided
- 1/8 teaspoon cumin
- 1/8 teaspoon paprika
- 1/8 teaspoon chipotle chili powder
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/8 teaspoon salt
- 1 bag Cascadian Farm Frozen Organic Hearty Blend of Brown Rice, Corn, Black Beans and Red Bell Pepper
- 2 cups romaine lettuce, chopped
- 1 avocado, sliced
- 1/2 cup tomatoes, chopped
- 2 tablespoons red onions, chopped
- 1/4 cup Greek yogurt or sour cream, nondairy, if preferred
- salsa, for serving, optional
Method
For the Tofu:
Step 1
Drain tofu and pat dry with paper towel. Cut into 1-inch cubes. Place into a bowl, drizzle with ½ tablespoon olive oil.
Step 2
In a small bowl, mix spices and salt. Sprinkle half over the tofu (reserving the rest for the rice mixture), tossing to coat evenly.
Step 3
Place tofu in an air fryer basket and air fry at 375F for about 15 minutes, flipping halfway, until crispy. Alternatively, if you don’t have an air fryer, you can cook in a skillet over medium heat for about 15 minutes or bake at 400F for about 20 minutes to desired crispness.
For the Rice Blend:
Step 1
While the tofu is cooking, heat remaining 1 tablespoon of olive oil in a skillet over medium heat. Add Cascadian Farm Frozen Organic Hearty Blend of Brown Rice, Corn, Black Beans and Red Bell Pepper to the skillet, cover and cook for 6-9 minutes. Add the remaining spice mix, stir to combine.
To Assemble:
Step 1
Divide lettuce into 2 bowls. Top with tofu, rice blend, avocado, tomatoes, red onion and Greek yogurt (or sour cream). Top with salsa, if desired.
