ingredients
- 2 tablespoons oil
- 1 medium onion, diced
- 1 medium green pepper, diced
- 1 medium red pepper, diced
- 2 large carrots, grated
- 1 (14-ounce) can diced tomatoes
- 1 (14-ounce) can British baked beans or chickpeas
- 1 red birds eye chili, finely diced
- 1 garlic, finely minced
- 1/2 teaspoon ginger, finely minced
- 2 teaspoons curry powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1 Bouillon cube, (optional), for serving
Method
Step 1
In a large saucepan, heat oil over medium heat. Add in onions and cook until translucent, 3-4 minutes.
Step 2
Stir in the garlic, ginger, smoked paprika, curry, cayenne pepper, thyme and chillies. Cook until fragrant, about 1 minute.
Step 3
Add in tomatoes, bell peppers and carrots. Simmer for about 5 minutes, stirring occasionally to prevent burning.
Step 4
Finally add chickpeas and bouillon cube. Continue cooking for another 3-5 minutes then taste and adjust for seasoning. Season with salt and pepper, particularly if not using bouillon cube. Serve warm with bread. Enjoy!
