ingredients
Quick-Pickled Cucumber and Red Onion Salad:
- 1/2 cup rice wine vinegar
- 2 teaspoons white sugar
- 1 teaspoon salt
- 2 large cucumbers, peeled, halved, and cut into slices
- 1/2 red onion, thinly sliced
- 1 tablespoon basil leaves, chopped

Spicy Peanut Noodles:
- kosher salt
- 1 package udon noodles, about 4 ounces
- 1/2 cup peanuts, roasted, plus more for garnish
- 1 tablespoon soy sauce, plus more if needed
- 2 tablespoons maple syrup
- 1 teaspoon fish sauce
- 1 1/2 teaspoons sriracha
- 2 cloves of garlic
- 1/2 tablespoon lime juice
- 1 teaspoon ginger, grated
- 1 tablespoon sesame oil
- 1 tablespoon grapeseed oil

Meatballs:
- 1 tablespoon honey
- 1 tablespoon oyster sauce
- 1 tablespoon sriracha
- 1 teaspoon soy sauce
- 1 package Crave House Italian Style Meatballs
- green onion, sliced, for garnish, optional
- sesame seeds, for garnish, optional
- cilantro, for garnish
- crunchy chili oil, for garnish, optional
Method
Step 1
Make pickling liquid: Whisk vinegar, sugar, salt and 2 tablespoons hot water in a medium bowl. Add cucumbers, red onion, and basil. Allow to pickle for at least 30 minutes.
Step 2
Make the noodles: Bring a large pot of salted water to a boil. Add udon noodles, return to a boil, then lower heat to a simmer and cook for 7 min. Drain noodles and run under cold water. Transfer noodles to a large mixing bowl, cover and refrigerate.
Step 3
In a food processor, add peanuts, soy sauce, maple syrup, fish sauce, sriracha, garlic, lime juice, and ginger. Pulse several times to a paste-like consistency. Slowly drizzle in grapeseed oil,sesame oil and 1 tablespoon warm water. Add more soy sauce to taste. Add sauce to chilled noodles. Mix well.
Step 4
Make the meatballs: Preheat the oven to 375℉.
Step 5
Whisk honey, oyster sauce, sriracha, and soy sauce in a small bowl.
Step 6
Place Crave House Italian Style Meatballs one-inch apart on a greased baking sheet. Brush each meatball with glaze, reserving some glaze for serving. Bake for 22 minutes.
Step 7
Serve meatballs with pickled cucumber salad, peanut noodles and reserve glaze. Garnish with green onion, sesame seeds, cilantro and chili oil, if desired.
