- 2 sticks (200 grams) unsalted butter, at room temperature
- 2 cups (50 grams) packed wild garlic leaves
- 1 garlic clove, minced
- Zest of 1 lemon
- 2 tablespoons fresh chopped parsley
- Kosher salt, to taste
Method
Step 1
Add the unsalted butter, wild garlic leaves, garlic, lemon zest, parsley, and a pinch of salt to a food processor. Blend until the mixture is smooth and all ingredients are fully incorporated.
Step 2
Lay a sheet of parchment paper on a flat surface. Scoop the mixture onto the parchment paper and shape it into a log.
Step 3
Wrap tightly in the parchment paper and store in the fridge.
