Carrot and Radish Kale Salad

The best Sunday dinners are ones that can be thrown together in less than 20 minutes. I whipped up a huge kale salad with quinoa, shredded carrots, radishes, hemp seeds, and sweet potatoes on the side. And the best part was the dressing. -@livingwellwithnic

Buy ingredients
Add ingredients directly to your favorite online grocery cart (where available).

For the Salad


  • 3 cups kale, chopped
  • 1 cup shredded carrots
  • 1 cup sliced radishes
  • 1/2 cup hemp seeds

For the Dressing


  • 1/4 tsp olive oil
  • 2 tbsp tahini
  • 3 limes, juiced
  • 1 garlic clove, minced
  • 1 tbsp coconut nectar or maple syrup
  • Handful of cilantro
  • 1/2 tsp ground cumin
  • Pink himalayan salt


  • Step 1

    In a large bowl, combine all salad ingredients.

  • Step 2

    In a separate small bowl, whisk together all dressing ingredients.

  • Step 3

    Toss salad with dressing and serve immediately.
