Apple Cinnamon Oat Pancakes
Happy weekend! Whipped up some of my apple-cinnamon oat pancakes and decided to make my hungry crew eat their pancakes with their hands. I don't know why I never did this before- just hand everyone a little dipping cup of maple syrup (add some cinnamon in there!) and everyone treats these little guys like dunkaroos. No silverware and less dishwashing!
Soba Noodle Salad
A lot of people don't realize most soba noodles aren't GF and contain wheat flour too- thankfully @kingsobanoodleculture has this buckwheat and amaranth noodle that's perfect for this soba noodle salad made with last week's recipe of purple cabbage and snap pea salad w/sesame-shallot vinaigrette, topped with sunflower microgreens. Lunchbox friendly, so that wins for me.

Chipotle Garlic Scape Pesto Dip. I am a bit of a sucker for mayos & aiolis, but most of those (especially vegan ones) are filled with unhealthy canola or soybean oil and artificial flavors. Was so glad to see @sirkensingtons to come out with their new vegan mayo, Fabanaise, made with aquafaba (the water you get after you cook chickpeas) for a more wholesome option for my vegan friends. That + some amazing seasonal garlic scapes = spicy awesome, so I partnered with them to make some zing for yo' tastebuds.
