This easy appetizer is inspired by classic Italian prosciutto with melon but reimagined to be enjoyed into the fall and winter months when pears are in season. It’s sweet, salty, savory, and perfect for Thanksgiving or Friendsgiving. You can showcase just one variety of pear or several different, but my personal favorites are Asian pears for their irresistible crunch and juicy bite for the raw preparation, and just ripe comice pears for the broiled preparation. A slightly bitter note from the radicchio is welcomed to cut through the richness of the prosciutto. Feel free to substitute a few sprigs of arugula in place of the radicchio. Another perk of this simple dish is that you can serve it at room temperature just after assembling, or pop it under the broiler for about 5 minutes until the prosciutto renders slightly and becomes crisp. Either way is delicious.

ingredients
- 2 pears (comice, Asian, or Bosc varieties)
- 1 (3-ounce) package prosciutto, (about 7 slices)
- 2 -3 leaves radicchio, torn into pieces
- Honey
- Fresh cracked black paper
Method
Step 1
Cut sections of the pear around the core, then slice into wedges.
Step 2
Slice the prosciutto in half lengthwise to make about 14 pieces.
Step 3
Lay a wedge of pear onto a piece of radicchio, then wrap a prosciutto slice around to secure them in place. Repeat with remaining pears and prosciutto.
Step 4
Arrange prosciutto-wrapped pears on a serving platter, heat-proof, if necessary. Drizzle with honey and top with fresh cracked black pepper.
Step 5
Serve at room temperature or broil for about 5 minutes, until prosciutto begins to crisp.
