ingredients
- 2 cups spelt flour
- 1 tbsp baking powder
- 1/3 tsp Kosher salt
- 1/3 cup vegan butter, cubed
- 1/2 cup hazelnut butter
- 1/4 cup plant-based milk
- 1 teaspoon instant coffee
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup hazelnuts, roasted and peeled
- 1 teaspoon ground coffee
- 1/4 cup hazelnut butter
- 2/3 cup maple syrup
- 1/2 tsp vanilla extract
Method
Step 1
Preheat oven to 350°F. Line a sheet tray with parchment paper.
Step 2
In a large bowl, mix the flour, baking powder and salt. Rub in vegan butter into the flour mixture with your hands until it’s a crumbly texture.
Step 3
In a medium mixing bowl, combine the hazelnut butter, plant-based milk, instant coffee, maple syrup, and vanilla extract.
Step 4
Pour the wet into the dry mixture and start working with your hands, if the dough is slightly dry, add more milk if needed.
Step 5
Scrape the dough out onto a parchment paper-lined surface with extra flour. Shape into a round shape and slice into pizza-like shapes of eight.
Step 6
Place on to prepared baking tray and bake until golden brown, about 15-18 minutes.
Step 7
While the scones are baking, make the glaze. Whisk together the roasted and chopped hazelnuts, coffee powder, hazelnut butter, maple syrup, vanilla and a pinch of salt and set aside until the scones are done.
Step 8
When the scones comes out of the oven drizzle over the cooled glaze over the warm scones.
