French Toast with Coconut Crust

ingredients

  • 2 medium bananas
  • 1/2 cup aquafaba or plant based milk
  • 1/2 teaspoon cinnamon
  • pinch of Kosher salt
  • 8 slices white bread
  • 1 cup shredded coconut
  • 1 tablespoon coconut oil, melted
  • 1 (28-ounce) can coconut cream, chilled
  • 1/2 cup maple syrup
  • 1/3 cup slivered almonds

Method

  • Step 1

    Place the bananas, aquafaba, cinnamon and salt in a blender. Blend until smooth. Remove from blender and place into large bowl. Add the shredded coconut into a similarly sized bowl.

  • Step 2

    Preheat a large pan with coconut oil on medium heat. Then, dip the white bread slices one at a time into the “egg” mixture and then in the coconut.

  • Step 3

    Fry each slice until brown on both sides, about 3-4 minutes. Serve with whipped coconut cream, maple syrup and slivered almonds.

  • Step 4

    To whip the coconut cream, simply place in a cooled bowl and whisk vigorously until soft peaks start to form, 1-2 minutes. Place in a piping bag with a star nozzle and make generous dollops on each French toast slice.

  • Step 5

    Serve and enjoy!
