ingredients
- 1 1/2 cups graham cracker cookies
- 6 1/2 tablespoons butter
- 3 1/3 cups cottage cheese
- 3/4 cup greek yogurt
- 1/2 cup caster sugar
- 2 eggs
- 2 tablepoons all purpose flour
- 1/4 teaspoon vanilla extract
- 1 mandarin zest
- 2 tablespoons powdered sugar
- raspberries
- 1 peach
Method
Step 1
Blend the cookies with semi-melted butter until you get a uniform, small crumb texture.
Step 2
Press the cookie butter mixture into the pan to create the walls of the cheesecake, then the bottom and bake for 10 minutes at 350°F.
Step 3
Blend the cottage cheese with yogurt until you get the same creamy texture. Set aside 340 g of the mixture. In the rest add sugar, vanilla extract and mix very very well
Step 4
Add the eggs one by one and mix after each
Step 5
Grate the mandarin on a small grater
Step 6
Add the mandarin juice, mix well, then add the flour, mandarin zest and stir with a spatula
Step 7
Poor everything on top of the cookies and bake for 1 h at 160 degrees Celsius
Step 8
Combine the set aside cheese with powder sugar and mandarin zest until creamy
Step 9
Decorate the cheesecake with the cream, then add berries and fruits
