Baked Spaghetti Squash With Cherry Tomatoes
I wasn't kidding about my cravings this morning, they were really really and this is how I attacked them!! Baked spaghetti squash with cherry tomatoes, sautéed onions, spinach, a dash of feta, infused mushrooms and some farm fresh eggs... served with some ginger tea; because when your hosting a meeting at your apartment you should always serve something delicious. Special shoutout to @thefeedfeed for this amazing @staub_usa dish, clearly I couldn't waste any time before using it !
Healthy Cauliflower Fried Rice Bowl
Hiding out from all of the Santa's with this bowl of Cauliflower Vegetable "Fried Rice". Did a double workout this morning and couldn't stop thinking about what to eat after. I was having a craving for some comforting fried rice thanks to the cold New York weather, but I didn't go to @cycfitness and @y7studio for nothing and fried rice is not how you refuel after a workout. So I thought to myself what can I have instead and that's when I remembered the cauliflower in my fridge. Swapping cauliflower for rice gives you an added boost of vitamins, protein and fiber and plus you can have eat more when it's just veggies! Stay tuned for the recipe on my blog this week. One Pan Breakfast
I may or may not have made 3 eggs this morning in order to capture the perfect one. Don't worry they did not go to waste. one pan breakfast! Perfect way to start the day after a 6am workout, who am I?!?! Hopefully I can keep that up. Not pictured, @bluestonelanecoffee MATCHA!!!!
