- 4 sweet potatoes, washed and scrubbed
- Olive oil, as needed
- Salt, to taste
- Black pepper, to taste
- 1 batch crispy chickpeas
- 1/ 2 cup salsa
- 2 scallions, thinly sliced
- 1 red chili, thinly sliced, optional
Preheat the oven to 375˚F. Poke the sweet potatoes all over with the tines of a fork. Place on a baking sheet and bake for about 45 minutes, or until tender.
Let the potatoes cool slightly, then split them down the middle. Season with olive oil, salt and pepper. Top the baked sweet potatoes with crispy chickpeas, salsa, scallions and chili pepper.
