Deup bap - translates to covered rice in Korean is a quintessential cooking style in many Korean homes. It is so easy to prepare because all you have to do is cook rice with toppings steamed directly over it and served a soy based sauce. This recipe uses oysters and beansprouts, which are some of my favorite deup bap toppings.
Kongnamul Gul Bap:
Rice with oysters and bean sprouts, served with 'yangnyeomjang' sauce. I made this rice with a Staub cocotte on the stovetop, but you can use electric rice cooker.
*Ingredients & Preparation (serves 2-3)
-uncooked rice: 1 cup
rinse and soak for 30 minutes
- water: 1 cup
- oysters 150g
shells removed, wash thoroughly
- kongnamul(bean sprouts) 300g
rinse and drain a couple of times
- 'yangnyeomjang' sauce
soy sauce 1/3 cup
scallions, finely chopped (can be substituted with wild chives) 1tbsp
garlic, minced 1tsp
red peppers, chopped 1tsp red chili powder 1tsp
sesame oil 1tsp
sesame seeds 1tsp
Place all sauce ingredients in a bowl and mix well.

Spread the prepared bean sprouts on top of the rice and water. Close the lid and bring the rice to a full boil over medium high heat. This will take 10 minutes.
Then lower the heat and add oysters on the top, don't forget to cover again, simmer for another 10 minutes. When it is all cooked, gently mix the rice to evenly distribute the bean sprouts and oysters.
Serve with the 'yangnyeomjang' sauce on the side. Add sauce to personal taste, mix(=bibim) and enjoy.
2. Pork Jangjorim:
Braised pork and quail eggs in soy sauce.
'Jangjorim' is one of the most popular Korean side dishes. Usually beef flank is used in Jangjorim, but my family prefers pork because of its texture.
*Ingredients & Preparation
- pork flank(or pork loin) 400 g
- quail eggs(can be substituted with eggs)
hard boiled and shells removed
Onion 1/2
Leek about 6cm
Garlic 5-6 piece
Peppercorns 1tsp
Soy sauce 2/3cup
Honey 1 tbsp (optional,to taste)

Boil enough water with garlic, leek and onion. When the water boils, put pork and peppercorns into the boiling water. Boil over medium heat for 20-30 minutes until the meat is tender.
When fully cooked, take out the pork meat and wash in cold water. Cut pork into bite-size pieces.
Put the pork meat and quail eggs into the pot and add 2/3 cup soy sauce, 2 cups of water, honey(or sugar). Cook for another 10-15 minutes (medium heat).
Cool it down and keep it in the fridge in a sealed container. Serve tepid or cold. When serve, drizzle the soy sauce on the top of the meat and quail eggs.
