ingredients
- 3 tablespoon olive oil
- 1 bulb of fennel, thinly sliced
- 1 can chickpeas, drained and rinsed
- 1 tablespoon green peppercorn
- 1 tablespoon capers
- 2 fillets smoked mackerel
- 1 lime, juiced
- salt and pepper, as needed
Method
Step 1
Preheat the oven to 400°F.
Step 2
Place the fennel and chickpeas on a baking tray. Add the green pepper corns and capers. Add one tablespoon of olive oil, season with salt and pepper. Bake for 10-15 minutes.
Step 3
Remove from the oven and let cool down for a few minutes.
Step 4
In a large bowl, whisk together the lime juice and remaining olive oil. Add the fennel and chickpea mixture, taste and season with additional salt and pepper if needed.
Step 5
Spoon vegetables onto a plate and serve the mackerel fillets on top.
