- 1 (16 ounce) can spicy refried beans
- 1 (16 ounce) can regular refried beans
- 1 cup sour cream
- 1 (1 ounce) package taco seasoning
- 1 (8 ounce) block cream cheese, softened
- 1 (3.8 ounce) can sliced black olives, drained
- ½ cup cilantro, chopped
- 1 (15 ounce) can black beans, drained
- 1 (14.5 ounce) can Red Gold Petite Diced Tomatoes, drained
- 1 (10 ounce) can Red Gold Tomato Love, Medium, diced tomatoes & 2x more chilies, drained
- 8 ounces Monterey Jack cheese, grated
- 8 ounces sharp cheddar cheese, grated
- 4 ounces queso fresco, crumbled
- Torilla or corn chips, for serving
Method
Step 1
Preheat oven to 350°F.
Step 2
In a 9x13 baking dish, combine refried beans, sour cream, taco seasoning, and cream cheese.
Step 3
Fold in black olives, cilantro, black beans, and both cans of tomatoes and chilies.
Step 4
Top with Monterey Jack and sharp cheddar cheese.
Step 5
Bake for 30 minutes.
Step 6
Top with queso fresco before serving.
