ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup quick oats
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract

Method

  • Step 1

    In a large bowl, whisk flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt to combine. In a separate medium bowl, whisk the milk, egg, oil, and vanilla. Add the milk mixture to the flour mixture and stir until the dry ingredients are just incorporated, careful to avoid over-mixing. Allow the batter to rest for 10 minutes. The batter should be thick, but still runny.

  • Step 2

    Heat a large non-stick frying pan or a pancake griddle over medium-low heat. Add a teaspoon of butter to grease the pan and then using a heaping 1/4 cup, dollop on the batter. You know it is time to flip with the edges are set and bubbles pop up all around, 2-3 minutes. Flip and cook until the other side is golden brown, 1-2 minutes. Repeat this process with the remaining batter and serve the pancakes with syrup, yogurt, or fresh fruit.
