This simple Pad Thai dish comes together in just a few minutes and makes for a tasty weeknight dinner! You can easily add your favorite protein (or keep it vegetarian), and with a little squeeze of lime and scallions, this dish is complete! Pro-tip: top it off with some crushed peanuts for texture!

ingredients

  • 5 ounce package Pad Thai rice noodles
  • 3 tablespoons vegetable oil
  • 1 large egg, room temperature
  • 1 cup bean sprouts
  • 1 1/2 tablespoons tamarind paste, to taste
  • 1/4 cup chicken stock
  • 3 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon chili sauce
  • 4 tablespoons brown sugar
  • 3 thinly sliced scallions
  • 2 lime, wedges

Method

  • Step 1

    Place dry rice noodles into a large bowl and add hot water over to cover. Soak noodles to loosen and soften for about 5–10 minutes. Drain and set aside.

  • Step 2

    In a large skillet heat vegetable oil over medium high heat. Add egg and stir until barely set, about 30 seconds.

  • Step 3

    Add noodles and cook for 1 minute. Stir in sprouts.

  • Step 4

    Add tamarind paste, chicken stock, fish sauce, soy sauce, chili sauce, and brown sugar. Toss noodles in the sauce until they are all well coated.

  • Step 5

    Plate noodles and garnish with scallions. Finish with squeeze of lime.
