ingredients
- 5 ounce package Pad Thai rice noodles
- 3 tablespoons vegetable oil
- 1 large egg, room temperature
- 1 cup bean sprouts
- 1 1/2 tablespoons tamarind paste, to taste
- 1/4 cup chicken stock
- 3 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 teaspoon chili sauce
- 4 tablespoons brown sugar
- 3 thinly sliced scallions
- 2 lime, wedges
Method
Step 1
Place dry rice noodles into a large bowl and add hot water over to cover. Soak noodles to loosen and soften for about 5–10 minutes. Drain and set aside.
Step 2
In a large skillet heat vegetable oil over medium high heat. Add egg and stir until barely set, about 30 seconds.
Step 3
Add noodles and cook for 1 minute. Stir in sprouts.
Step 4
Add tamarind paste, chicken stock, fish sauce, soy sauce, chili sauce, and brown sugar. Toss noodles in the sauce until they are all well coated.
Step 5
Plate noodles and garnish with scallions. Finish with squeeze of lime.
