ingredients
- 4 sweet potato, peeled and spiralized
- 4 tablespoons olive oil
- Salt and pepper, to taste
- 4 large eggs
- 1 tablespoon hot sauce
- 1 cup greek yogurt
- 1 teaspoon white vinegar
- Scallions, as garnish
Method
Step 1
Heat oil in a large pan over medium heat. Add spiralized sweet potatoes to the pan, season with salt and pepper, and cook for 7-8 minutes or until softened.
Step 2
Form the spiralized potato into 4 nest shapes in the pan. Crack an egg into the center of each nest. Cover the pan and cook until the egg is just set. Transfer the dish to a plate.
Step 3
In a small bowl, mix together the hot sauce, yogurt and vinegar. Serve the sweet potato egg nest with the yogurt sauce.
