- 11/3 cups cherry tomatoes, halved
- 1/4 cup extra virgin olive oil
- 4 slices sourdough bread
- 2 avocados
- 1 tablespoon plus 1 teaspoon zaatar seasoning
Preheat oven or toaster oven to 425ºF. Spread cherry tomatoes on an aluminum foil-lined baking sheet and drizzle with olive oil. Bake for 20-25 minutes.
Toast sourdough bread until just crispy. Add avocado to a bowl and mash with a fork. Top bread with avocado. Finish off with roasted tomatoes and a sprinkle of za'atar seasoning.
