- 4 medium purple sweet potatoes, washed and cut into 1/4 inch wedges
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/ 2 teaspoon paprika
- 1 1/ 2 tablespoons olive oil
Preheat oven to 400°F. Put potatoes in a large bowl and sprinkle with sea salt, black pepper, garlic powder and paprika. Drizzle with olive oil and toss to coat.
Spread the purple sweet potatoes in a single layer on a baking tray covered with baking paper. Make sure the potatoes aren't overcrowded, otherwise they will stick together and won't crisp up. Bake the potatoes in the oven for about 30-40 minutes.
Crispy Oven Roasted Purple Sweet Potato Fries
These crispy purple sweet potato fries are a perfect side dish. Or you can eat it as a snack. Both with a healthy yoghurt dipping sauce made from plain yoghurt or Greek yoghurt mixed with a pinch of garlic powder and a pinch of black pepper.
