For the Spice Cake
ingredients
- 2 cups all purpose flour
- 1/4 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1 3/4 cup light brown sugar, packed
- 3/4 cup vegetable oil
- 3/4 cup applesauce
- 2 1/2 teaspoons vanilla extract
- 4 large eggs
- 1 cup buttermilk
For the Brown Sugar Frosting
ingredients
- 1 1/2 cups (aka 3 sticks) unsalted butter, at room temperature
- 4 1/2 cups powdered sugar
- 1 cup light brown sugar
- 5 - 6 tablespoons heavy cream
- 1 tablespoon vanilla extract
- Pinch of salt
For the Apple Pie Filling
ingredients
- 4-5 large apples (Honeycrisp and Granny Smith are recommended), peeled, cored, and diced into small pieces
- Juice of 1/2 lemon
- 4 tablespoons unsalted butter
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1 1/2 teaspoons cinnamon
- Pinch of salt
For the Cake Garnish

- 1 1/2 cups salted caramel
- Sprinkles
Make the Cake
Method
Step 1
Grease two 8" circle cake pans (or four 5" cake pans) with baking spray and preheat the oven to 350℉.
Step 2
Sift together flours, baking powder, baking soda, salt, and spices in a bowl and set aside.
Step 3
In a large bowl, add brown sugar and vegetable oil and mix until combined and no lumps of sugar remain. Add applesauce, followed by eggs and vanilla. Alternate additions of dry ingredients and buttermilk, starting and finishing with dry ingredients. Mix only until no streaks remain, careful not to over mix.
Step 4
Pour the batter into the pans and bake for 25-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
Make the Buttercream
Step 1
Cream the butter in stand mixer with a paddle attachment until light and creamy, about 2 minutes.
Step 2
Add remaining ingredients and mix on low until incorporated. Increase speed to medium-high and mix until smooth and light, 3-5 minutes. Adjust as desired, adding more powdered sugar if too thin and more cream if too thick.
Make the Apple Pie Filling
Step 1
Place all ingredients in a medium sauce pot and stir to combine. Cook over medium-low heat until apples soften slightly, about 8-10 minutes. Be careful not to over cook and turn to applesauce. Set aside until cool.
To Assemble the Cake
Step 1
Place the first cake layer onto a plate or cardboard cake round. Ice the first layer of cake with the brown sugar frosting and top with apple pie filling. Repeat until the cake is compeltely filled and layered.
Step 2
Ice the sides and top of the cake with the brown sugar frosting. Pipe the frosting in a nice design on the top edge of the cake. Sprinkle the sprinkles over the cake.
