- 2 cups all-purpose flour
- 1 cup almond flour
- 3/4 teaspoon fine sea salt
- 1 cup room temperature unsalted butter
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- Zest of 1 lemon
- Powdered sugar, for dusting
- Jam of choice, for filling
Method
Step 1
In a medium bowl, whisk together the all-purpose flour, almond flour, and fine sea salt.
Step 2
In a separate large bowl, beat the room temperature butter and sugar together until light and fluffy, about 2-3 minutes. Add the vanilla extract, egg, and lemon zest, mixing until well combined.

Gradually add the flour mixture to the butter mixture, mixing just until a soft dough forms

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30-60 minutes until firm.

Preheat the oven to 350°F and line a baking sheet with parchment paper.

On a lightly floured surface, roll out the chilled dough to 1/4-inch thickness. Use a heart-shaped cookie cutter to cut out shapes, then slice each heart in half to create ghost shapes. Use the small end of a piping tip to punch out two holes for the eyes, and the larger end for the mouth. Gently tilt and press the cookies to enhance their ghostly appearance.
Step 7
Place the cookies on the prepared baking sheet and bake for 11-13 minutes, or until the edges are lightly golden.

Transfer the cookies to a wire rack and let them cool completely.

Once cooled, dust the tops of the cookies with powdered sugar. Spread a thin layer of your favorite jam on the bottom halves and sandwich them together with the dusted tops.

Keep these cookies stored in an airtight container at room temperature for up to 3 days. For longer storage, place them in an airtight container in the refrigerator for up to 1 week. You can also freeze the unassembled cookies (without the jam) for up to 2 months. Just thaw, dust with powdered sugar, and fill with jam before serving.
