No-brainer Marinara

No-brainer Marinara
"So you want to learn how to achieve those authentic Italian flavors? You keep trying to make Italian food at home but the frustration builds. WHY!? Why can't I get it? Trust me, we've all been there. Tip numero uno-- reduce the ingredients. It's that simple. Also, try to imagine what your ancestors would've had at their disposal. They would've been working with fresh ingredients from the garden and not much else. Trust me, your nonnuccia wasn't drying herbs and she sure as hell wasn't throwing away delicate ingredients on a sauce that'd be mopped up in fifteen minutes by a group of overweight men. It's a no-brainer."

ingredients

  • 6 cups peeled and minced San Marzano Tomatoes
  • 1 1/2 cup Fresh Basil
  • 3 Garlic Cloves
  • Flakey Salt

Method

  • Step 1

Drop the garlic and half of the San Marzano tomatoes into a kitchen processor and pulse a few times-- until you can see bits of garlic throughout. ***Don't over blend, it'll incorporate too much air and you'll lose the color.***

  • Step 2

Give the basil a rough chop and drop it into the food processor and pulse. Once everything is pretty much blended and chunky, pour it into a sauce pot and simmer for about an hour.

  • Step 3

Season with some flakey salt and presto!
