Literally, no other pizza will speak to me as a New Yorker. Charred scallions, pickled red onions, lox, and cream cheese adorn this Ooni pizza. A classic take on an NYC staple - everything bagels with cream cheese and lox you'd find at any deli in the city.

ingredients
Pickled Red Onion
- 1 red onion, thinly sliced
- 1/4 cup water
- 3/4 cup apple cider vinegar
- 1 1/2 tablespoons sugar
- 1 teaspoon kosher salt
ingredients
Pizza
- 3 tablespoons olive oil, plus more for brushing the crust
- 2 bunches of scallions
- Everything bagel seasoning, to taste
- 1 8 ounce package cream cheese (plus more if desired), at room temperature
- 1 12 ounce package of thinly sliced smoked salmon (lox)
- Pickled red onions (above)
- Fresh lemon juice, for serving
- Fresh dill, for topping
Method
To make the pizza dough:
Step 1
Follow the instructions via the Ooni pizza dough recipe of your choice. While dough proofs, prep the remaining steps.
To make the quick pickled red onions:
Step 1
Place the thinly sliced red onions into a large mason jar.
Step 2
In a small saucepan, combine water, apple cider vinegar, sugar, and salt. Bring to a soft simmer over medium heat.
Step 3
Pour saucepan ingredients into the mason jar and let cool for 20-30 minutes.
Step 4
Once cool, the onions are ready for topping the pizza.
To assemble the pizza:
Step 1
Preheat an Ooni pizza oven to 450°F.
Step 2
Toss the scallions in the olive oil and place them in a pan, then into the Ooni for 2-3 minutes or until fragrant and charred. Remove from the oven and set aside to cool. Chop into bite-size pieces.
Step 3
Roll out pizza dough according to Ooni pizza dough instructions. Place dough into the Ooni and cook for 5-10 minutes or until completely cooked through and browned on the edges.
Step 4
Remove from oven and brush the crust with olive oil and a sprinkling of everything bagel seasoning. Cool for 5 minutes before topping.
Step 5
Starting at the center, spread cream cheese evenly over the crust leaving about a 1-inch margin. Top with lox, pickled red onion, charred scallions, and dill.
Step 6
Serve immediately with a squeeze of fresh lemon juice and more everything bagel seasoning if desired.
