This swirly chocolate happiness is what dreams are made of! (Could serve two, usually serves one) 3 squares Unsweetened Baking Chocolate (approx 3 oz) 1/2 tsp Coconut Oil 2 tbsp Swerve Confectioner's Style No Calorie Sweetener (3 tbsp if would like it very sweet) Strawberries for dipping Melt the chocolate in the microwave in a small glass bowl, 45 seconds at a time, until very soft. Two cycles should do it. Stir in coconut oil. Add sweetener a little at a time and stir continuously. Taste, add more, taste, until it is sweet enough to tickle your taste buds. OPTIONAL: Using the same melting method, melt 1 square of Baker's white chocolate and using a 1/2 teaspoon measure, drizzle a small amount over your melted chocolate and swirl with a toothpick. Used as a vehicle to consume more fruit. Strawberries are my favorite lower-carb fruit option but blueberries and raspberries are delectable as well!
