ingredients

  • 1 cup dried pineapple
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup ground almonds
  • 1 tablespoon vanilla coconut oil
  • 1/4 teaspoon vanilla extract
  • Zest of half a lime
  • Pinch of salt
  • 1 1/2 tablespoons coconut flour
  • Unsweetened coconut flakes, hemp, and ground almonds, for rolling

Method

  • Step 1

    Soak pineapple in filtered water for about a couple of hours and then drain.

  • Step 2

    Place drained pineapple and remaining ingredients, except coconut flour, in a food processor. Process until combined. Mix in coconut flour for a firmer bind. The coconut flour absorbs the excess stickiness and makes it easier to roll and adds texture.

  • Step 3

    Shape into balls. Roll in desiccated coconut, hemp, or ground almonds. Store in refrigerator.
